WHere is an easy interpretation of a drink from a new menu. Designed as a party-sized premix that's bursting full of tastes of the Christmas time, which makes it excellent for your holiday party. Any leftover cordial to use in morning drinks, puddings, or to make more rounds of the drink.
The Bikini Cocktail
Serves 10 servings
Ingredients for the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Premix (yields 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Put the listed items into a saucepan, heat until it reaches a gentle boil, mixing to dissolve. Next, turn off the burner and let it to cool down fully. Decant into an clean bottle, cap it and store in the refrigerator, it will last for up to a month.
To make Premix: Mix every spirits and syrup into a large bottle, let it rest for an hour, then filter it preferably using cheesecloth, so it's perfectly clear.
To serve: Add 85ml of the premix into a mixing glass filled with ice, gently stirring carefully for one minute to cool it down. Filter into an chilled martini glass or a similar vessel, top with a few cranberries and finish with a light spray of the essential oil over the drink.
